I read Middle Cornish /ei/ as [ei] or [eː], by no means [ɛɪ] (which
no one says either).

But those are in absolute final Auslaut. In KS it is unnecessary to
write <kei>, <chei>, because <ky>, <chy> satisfies the requirement
(there are three words in -y which do not have [əi] in RLC.) <ei> in
these wirds is just decorative.
